Pancakes with Yogurt & Freeze-Dried Blueberries

Pancakes are always a good idea – especially when served with creamy yogurt and the crispy, fruity topping of Seeberger freeze-dried blueberries. This easy recipe combines fluffy pancakes with the natural sweetness and intense flavor of freeze-dried berries. Perfect for a relaxed start to your day or as a sweet snack in between!

Ingredients

  • 150g wheat or spelt flour
  • 1tsp baking powder
  • 1Pn. salt
  • 1tbsp sugar (optional)
  • 1pc egg
  • 200ml milk (can be plant-based)
  • 1tbsp oil or melted butter
  • 1tsp fat for the pan
  • 1tbsp maple syrup or honey for finishing (optional)
  • 150g natural or Greek yogurt

Preparation

  1. Mix the batter: In a bowl, combine flour, baking powder, salt, and sugar. In a second bowl, whisk together milk, egg, and oil. Add the wet ingredients to the dry ingredients and mix into a smooth batter. Let it rest briefly.
  2. Cook the pancakes: Heat a pan over medium heat with a little oil. Add 1–2 tablespoons of batter per pancake, spread lightly, and cook until golden brown – about 2 minutes per side. Keep the finished pancakes warm in the oven until all are done.
  3. Serve and top: Stack the pancakes on plates, add a spoonful of yogurt, and sprinkle with Seeberger freeze-dried blueberries. If you like, drizzle with a bit of maple syrup – and enjoy your breakfast treat!
