Chocolate Chip Cookies with Sea Salt & Freeze-Dried Raspberries

Ingredients

  • 120g soft butter
  • 100g brown sugar
  • 50g white sugar
  • 1pc egg (size M)
  • 1tsp vanilla extract
  • 180g wheat flour
  • 1tsp baking soda
  • 1tsp baking powder
  • 1Pn. salt
  • 120g Chocolate Chips
  • 1Pn. Sea salt for topping

Preparation

  1. Preheat the oven to 180°C (conventional) and line a baking tray with parchment paper.  
  2. In a bowl, cream the butter with the brown and white sugar. Add the egg and vanilla extract, then mix briefly.  
  3. Combine flour, baking soda, baking powder and salt, then add to the butter mixture. Stir until a smooth dough forms.  
  4. Fold in the chocolate chips.  
  5. Shape the dough into walnutsized balls and place them on the baking tray with enough space in between. Gently flatten each one.  
  6. Top each cookie dough ball with pieces of freezedried raspberries and sprinkle with a few sea salt flakes.  
  7. Bake for 10–12 minutes until the edges are lightly golden, while the centre remains soft. The cookies will firm up as they cool.  
  8. Let them cool and enjoy the perfect combination of chocolate, fruity raspberry and a hint of sea salt.
