Vegan walnut and mushroom tacos

Fancy a fresh, vegan taco variation? These walnut and mushroom tacos are not only super tasty, but also quick to make! With spices and fresh coriander, every bite is a delight.

Ingredients

  • 250g Mushrooms
  • 1pc Onion, finely chopped
  • 1Cl. Garlic, finely chopped
  • 2tbsp Olive oil
  • 1tsp Cumin
  • 1tsp smoked paprika powder
  • 1tsp Chili powder (to taste)
  • 1tbsp Soy sauce
  • 1Pn. Salt
  • 6pc small tortillas
  • 1Hf. fresh coriander, chopped
  • 6Sl. Limes
  • 6Sl. Avocado as a topping
  • 200g vegan yogurt sauce as a topping
  • 1pc pickled red onion as a topping

Tacos gefüllt mit Gemüse und Nüssen, serviert auf einem Teller neben geschnittenen Limetten.

Preparation

Soak the walnuts in warm water for 20 minutes, then drain and set aside.
Meanwhile, carefully grate the mushrooms and fry them in a pan with a little olive oil until they lose their water and turn a nice golden brown. Season the mushrooms with cumin, smoked paprika powder, chilli powder and a pinch of salt and stir everything well so that the flavors really come into their own.
Now roughly chop the soaked walnuts and add them to the pan with the mushrooms along with the soy sauce. Mix everything well and leave the mixture to simmer over a low heat for another 5 minutes.

Divide the filling between your tortillas, garnish with fresh coriander and your favorite toppings and serve with a few lime wedges.
