Pancakes with yogurt & freeze-dried blueberries

Ingredients

  • 150g Wheat or spelt flour
  • 1tsp Baking powder
  • 1Pn. Salt
  • 1tbsp Sugar
  • 1pc Egg
  • 200ml Milk
  • 1tbsp Oil or melted butter
  • 1tsp Fat for the pan
  • 1tbsp Maple syrup or liquid honey to refine (optional)
  • 150g Natural or Greek yogurt

Preparation

  1. Mix the dough: Combine the flour, baking powder, salt and sugar in a bowl. In a second bowl, whisk together the milk, egg and oil and then mix with the dry ingredients to form a smooth batter. Leave to rest briefly.
  2. Fry the pancakes: Heat a frying pan over a medium heat with a little oil. Pour 1-2 tablespoons of batter into the pan at a time, spread lightly and fry until golden brown - approx. 2 minutes per side. Keep the finished pancakes warm in the oven until they are all cooked.
  3. Serve & top: Stack the pancakes on plates, garnish with a spoonful of yogurt and sprinkle with Seeberger freeze-dried blueberries. If you like, top it all off with a drizzle of maple syrup - and your breakfast dream is complete!
