Ingredients

  • 2Cup gluten-free oat flakes
  • 1Cup Buckwheat grains (optional)
  • 1Cup Grated coconut
  • 1tsp Cinnamon
  • 1Cup Olive oil
  • 1Cup Maple syrup
  • 1pn Vanilla

Preparation

Preheat the oven to 200 degrees (fan oven if you have one). Chop the nuts and place in a large bowl with the remaining dry ingredients. Place the oil, syrup, almond paste and vanilla in a small saucepan. Stir over medium heat and pour over the dry ingredients. Mix thoroughly and spread in a thin layer on (preferably) 2 baking sheets. Bake for 30 minutes, turning the trays halfway through.

Leave the muesli to set on the trays until it has reached room temperature and only then remove it from the tin. Pour it into an airtight jar.
