The colorful pulse of the jungle

From the lush plantations of Ghana to the green fields of Côte d'Ivoire, the west coast of Africa is a living canvas, painted with the colors and shapes of nature. Agriculture doesn't just happen here - it is celebrated, in a rhythm as old as the earth itself. Rainy seasons and dry periods alternate, days and nights are practically the same length. Because the equator is very close, temperatures fluctuate more between day and night than between summer and winter. A year-round paradise for flora and fauna.

Ghana's Garden of Eden

Deep in the heart of Ghana, where the sun's rays roast the savannah and rain brings salvation, colorful fruits grow in an abundance that only the tropical climate can produce. We all know and love them: Pineapples, bananas, avocados, papayas, coconuts ... - and our mangoes also start here.

The mango has a rich history that literally stretches back thousands of years. With over 250 varieties worldwide, this fruit offers an incredible variety of flavors. Mangoes are now grown in almost all tropical and subtropical regions, with the two varieties Kent and Keitt being the most common in commercial areas. They are popular as fresh fruit and perfect for drying. However, no two are the same: Depending on the variety, the mango is oval or kidney-shaped, yellow, green or green-red. The flesh is bright yellow to orange, tastes nectar-sweet and is the perfect snack when you need energy quickly. The skin is usually firm - but some wild varieties are also soft for snacking.

The mango is also top-class when it comes to nutrients: In addition to a good power dose of vitamins A, E and C, it also boosts you with potassium, copper, high-quality enzymes and antioxidants. A powerful boost for your immune system, as well as being good for your eyes, skin and hair. At the same time, their fiber keeps your digestion on its toes.

For 1 kg of dried mangoes, we process approx. 12 kg of fresh mangoes.

Mango mania all year round

The majority of Seeberger mangoes come from Africa. Sometimes, however, we need larger quantities than these producers can supply - in which case we sometimes knock on the door of South American farmers in Peru. This not only helps us to cover our needs, but also distributes the harvest peaks evenly throughout the year: in Africa, the mango harvest booms between May and July, while in Peru the peak period is from December to February. Although the summer harvest is somewhat larger, we can turn freshly picked mangoes into sun-to-go all year round - regardless of whether the sun is sizzling or snow is falling in Europe.

Peel, cut and place once

The transformation of juicy mangoes into a delicious delicacy is a carefully coordinated process. Mangoes that are not fully ripe are left to ripen until they are perfect. The color is then checked and damaged or "inhabited" specimens are discarded. After washing, the mangoes are lovingly treated by hand: first peeled, then cut into the typical slices that we find in the bag. A short bath in a sulphurous solution preserves their bright yellow color and protects them from spoilage and insects.

To keep their sun-golden essence as original as possible, the mangoes are laid out on special drying grids. They remain there for around 15 hours, sweating the residual moisture out of the flesh at temperatures of 65 - 75° Celsius. Shortly before departure, the sweet slices are dusted with potato starch and packed airtight. This prevents them from sticking together on the way to us and preserves their full flavor.
