How does freeze-drying work?

Freeze-drying, also known as lyophilization, is a preservation process in which water is extracted from frozen food using negative pressure - directly in the form of steam. The special feature: The fruit does not pass through a liquid phase, which means that its structure, color and, above all, taste are almost completely preserved.

The process in detail:

  1. Shock freezing: the fresh berries are washed, sorted and shock frozen at around -40 °C immediately after harvesting. This ensures that the cell structure and nutrients are optimally protected.
  2. Vacuum drying: The pressure is greatly reduced in special chambers. The frozen water in the berries evaporates without melting (sublimates).
  3. Final drying: To remove the remaining moisture, the berries are gently post-dried at a slightly higher temperature. The result: crispy, light berries with an intense aroma.
