Ingredients

  • 750 g apple Elstar (without peel, in cubes)
  • 3 tsp cornstarch
  • 1 Prise(n) grated tonka bean
  • 1 Stück(e) lemon, juice and zest
  • 1 Stück(e) of ginger
  • 75 Milliliter apple juice naturally cloudy
  • 125 g wheat flour type 405
  • 1 tsp pumpkin spice
  • 100 g fine baking sugar
  • 100 g Seeberger walnut kernels chopped
  • 125 g cold butter in cubes
  • 100 g Seeberger pumpkin seeds finely chopped
  • 1 Stück(e) lemon zest
  • 1 Prise(n) of salt
  • 50 g Seeberger whole pumpkin seeds
  • 100 g crème fraiche
  • 1 tsp maple syrup
  • 10 g butter to grease the baking dish

Preparation

Start by peeling the apples, removing the cores, and cutting them into small cubes. In a bowl, mix the apple cubes with cornstarch, apple juice, lemon juice, and a hint of tonka bean. Grate some fresh ginger and add it to the mixture, then let everything sit for 10 minutes to let the flavors blend.

While the apples rest, prepare the crumble dough. Combine wheat flour, Pumpkin Spice, baking sugar, crushed walnut kernels, cold butter, chopped pumpkin seeds, lemon zest, and a pinch of salt. Knead everything together until crumbly.

Next, grease a baking dish with butter and spread the marinated apple pieces evenly inside. Take the crumble dough and gently sprinkle it over the apples in small, rustic crumbs. Finish by scattering some whole pumpkin seeds on top for extra crunch.

Bake in the middle of the oven at 180°C for 30-40 minutes until golden and deliciously crispy.

For the perfect finishing touch, mix crème fraîche with a little maple syrup and a dash of tonka bean. Serve a dollop of this creamy blend alongside the warm crumble, and enjoy!
