Pistachio shortbread, one of my favorite Christmas cookies this year. The best thing is that you don't need a pastry press, just a piping bag, as the dough is soft enough to pipe onto the baking paper. After baking, they are decorated with dark chocolate coating and chopped green pistachios, incredibly delicious together.
